This stir-fried vegetable is also known as Sabji Bhaji is the easiest, quick, and flavorful vegetarian dish that you have ever try! This is a Bengali recipe, which usually served for breakfast along with hot chapati.
What makes this Sabji Bhaji special is Panch Phoron. Panch Phoron is a Bengali five-spice blend of cumin seeds, nigella seeds, mustard, fenugreek, and fennel seeds. They tempered into the hot oil to release their all aroma and then stir fry all the veggies into this aromatic oil to get a delicious and savoury dish.
You can add whatever vegetable you like. I usually use fresh vegetables to make this stir fry. Sometimes I also add textured soya or some leftover cooked chickpeas to make it more complete.
You can serve it as a side dish or with some Chapatis and Raita (yoghurt sauce).
Ingredients
- 300g mixed vegetables (cauliflower, potatoes, carrots, green beans, peas, zucchini etc.)
- 1 teaspoon of Panch Phoron
- 2-3 dry red chillies
- 1 teaspoon turmeric powder
- 1 tablespoon oil
- Salt to taste
Instructions:
-Cut all the vegetables into small cubes
-Put a pan with oil on medium-high heat. When the oil is hot, add dry red chillies and Panch Phoron.
-When they start to sizzle add the vegetables, turmeric, and salt. Cover the pan with a lid and lower the heat to medium.
-Let it cook for 10 to 12 minutes while stirring occasionally. Uncover the pan and check that the vegetables are well cooked.
-Serve them with Chapati or as a side dish.

- You can buy Panch Phoron already mix, or you can make it by mixing equal parts of cumin, nigella, fenugreek, mustard and fennel seeds.
