Method
- Cut all the vegetables into small cubes
- Put a pan with oil on medium-high heat. When the oil is hot, add dry red chillies and Panch Phoron.
- When they start to sizzle add the vegetables, turmeric, and salt. Cover the pan with a lid and lower the heat to medium.
- Let it cook for 10 to 12 minutes while stirring occasionally. Uncover the pan and check that the vegetables are well cooked.
- Serve them with Chapati or as a side dish.
Notes
Tips and tricks:
- To prepare this stir fry, you can use a store-bought ready vegetable mix.
- You can buy Panch Phoron already mix, or you can make it by mixing equal parts of cumin, nigella, fenugreek, mustard and fennel seeds.
