Easy Vegetable Stir Fry (Sabji Bhaji)

Ingredients
  

  • 300g mixed vegetables (cauliflower, potatoes, carrots, green beans, peas, zucchini etc.)
  • 1 teaspoon of Panch Phoron
  • 2-3 dry red chillies
  • 1 teaspoon turmeric powder
  • 1 tablespoon oil
  • Salt to taste

Method
 

  1. Cut all the vegetables into small cubes
  2. Put a pan with oil on medium-high heat. When the oil is hot, add dry red chillies and Panch Phoron.
  3. When they start to sizzle add the vegetables, turmeric, and salt. Cover the pan with a lid and lower the heat to medium.
  4. Let it cook for 10 to 12 minutes while stirring occasionally. Uncover the pan and check that the vegetables are well cooked.
  5. Serve them with Chapati or as a side dish.

Notes

Tips and tricks:

  • To prepare this stir fry, you can use a store-bought ready vegetable mix.
  • You can buy Panch Phoron already mix, or you can make it by mixing equal parts of cumin, nigella, fenugreek, mustard and fennel seeds.
