Ingredients
  

  • 400g frozen spinach/fresh spinach
  • 100g Paneer cut into small cubes
  • 2 teaspoons grated ginger
  • 2 dried red chillies
  • 1 teaspoon cumin seeds
  • 1 teaspoon turmeric powder
  • 2-3 tablespoons oil
  • Salt to taste

Method
 

  1. Put a pan with oil on medium-high heat. When the oil is hot, add cumin seeds and dry red chillies.
  2. When they start to sizzle, add the defrosted spinach with all the liquid, turmeric, and salt.
  3. Mix everything, add a little water, and cover the pan. Let it cook over low heat until the spinach is perfectly cooked and there is no water left.
  4. Add the grated ginger and mix.
  5. Put a separate pan with a little oil on high heat. Add Paneer cubes with a pinch of turmeric and toss them for a few seconds. Add them to the cooked spinach and mix.
  6. Serve with basmati rice or chapati.

Notes

Tips and Tricks:

  • While frying Paneer, it has to be for just a few seconds; otherwise, it gets hard and rubbery.
  • You can sprinkle Garam Masala on top before serving.
  • You can serve this dish as a first course or as a garnish
