Red Lentil Fritters (Piyaju)

Ingredients
  

  • 200g red lentils
  • One large onion, finely chopped
  • One teaspoon turmeric
  • One teaspoon ginger- garlic paste
  • Two/three tablespoons fresh coriander leaves chopped
  • One/two fresh green chillies chopped
  • Salt to taste
  • Oil for frying

Method
 

  1. Soak the lentils for three to four hours.
  2. Then drain all the water very well and grind them in a food processor.
  3. Put the grind lentils in a bowl and add the remaining ingredients. Mix everything very well.
  4. Put a pan with plenty of oil. When it is hot enough, take small portions of dough with a spoon and add them to the oil.
  5. Fry them over a medium flame until they are golden brown. Serve with mint chutney or ketchup.

Notes

Tips and tricks:

  • You have to drain the lentils very well after soaking.
  • For grinding the lentils do not add water, they don’t have to be very fine.
  • A good crispy Piyaju should have a lot of onion, so make sure to add plenty of onion.
  • You can prepare them without ginger- garlic paste, but I usually add very little because it increases the taste a lot.
