Aloo Tikki (Spiced Indian Potato Croquettes)

Ingredients
  

  • Four-Five medium potatoes
  • One small onion cut into very fine slices
  • 7-8 fresh coriander sprigs well chopped
  • Two teaspoons grated ginger or ginger paste
  • Very finely chopped green chilli (optional)
  • Salt to taste
  • Breadcrumbs
  • One egg
  • Cooking oil
Spices:
  • One teaspoon ground cumin
  • Half teaspoon garam masala
  • Half teaspoon ground black pepper
  • One teaspoon chat masala

Method
 

  1. Boil the potatoes and let them cool. Once the potatoes are cooled, peel and mash them using a potato masher.
  2. In a frying pan add a little amount of oil and fry the chopped onion. When they are golden brown, remove them from the pan and reserve them.
  3. In a large bowl add the mashed potatoes, ginger paste, green chilli, chopped coriander leaves, the ground spices, fried onion, and salt. Mix everything well.
  4. Take small portions of the mixture and give it a flattened ball size (see pictures). Dip them in beaten egg and pass through breadcrumbs.
  5. Put a pot on medium-high heat with plenty of oil. Once the oil is hot, drop one aloo Tikki. When it starts to get a little bit of colour, flip over and then drop the second one. This ensures that they do not break.
  6. Fry them until become nice golden-brown colour. Put them on a plate with kitchen paper, serve them hot with Sriracha sauce or with Ketchup.

Notes

Tips and Tricks

  • The chat masala has salt, so when adding the salt must be careful.
